The wine was matured for a minimum of 36 months on its lees before being matured on the final cork for 6 months before release.
Onion skin in colour, this sparkling wine has a sophisticated palate, good fruit definition, bright acidity and a delicate bubble before a very dry finish. This Pinot-heavy cuvee shows fleshy red fruits, strawberries and cream, an impressively full mousse, crushed rock candy, red pithy cherry depth and a delicious full, long finish. A particularly elegant pink bubbly.
