Winemaking:
Made up from 2 vineyards, one on a North Facing slope and the other on a South-Easterly slope, each component was harvested separately, de-stemmed and hand sorted into tank. The wines spent between 14 and 21 days on the skins, depending on their tannin structure with two to three pump overs per day. Once the fermentation was completed the wines were pressed to undergo malolactic fermentation in barrel and tank. After completion, the wine was racked to French oak barrels (39% new oak, 22% second fill, 39% third and fourth fill) for a period of 23 months. Components were blended and allowed to clarify naturally before filtration and bottling.
In The Glass:
Classic Simonsberg-Stellenbosch Cabernet Sauvignon, Gold award winner at the Global Cabernet Sauvignon Masters 2026 in London. The nose expresses true Cabernet character, cassis, ripe plums, tobacco, pencil shavings and spice. The palate is tightly wound around dense black fruit with finely textured tannins, cedarwood and pencil shavings, with a long and lingering aftertaste.
Perfect Pairings:
This Cabernet Sauvignon shines alongside dry-aged or grilled beef, roast lamb, venison, and mature hard cheeses. It also pairs beautifully with creamy baked potatoes, salt-crusted sugar snap peas, artisanal cheese platters, and South African beef biltong. Serve at 16–18°C for optimal enjoyment.
